Chia seeds are a powerhouse of nutrients, packed with fiber, omegas, potassium, and magnesium.
These superfood seeds boost energy, improve endurance, regulate digestion and are anti-inflammatory.
Unlike flax seed, they don’t need to be ground for you to absorb the nutrients.
This simple chia pudding is a make-ahead recipe that will fill you up and help you debloat. Chia seeds are vegan, gluten-free, grain-free, raw, oil-free, refined sugar-free, and soy-free.
Ingredients
- 2 tbsp chia seeds
- 1/2 tbsp honey
- 1 cup almond milk
- Coconut and Dried Apricots (or any preferred toppings)
Directions
- Mix chia seeds, coconut milk, and honey together in a small bowl or glass mason jar. Let it set in the refrigerator overnight.
- Chia seeds will expand and turn into pudding with the consistency of applesauce. Remove it from the fridge.
- Serve chilled with sliced fruits or and topping of your choice.
Recipe Note
The consistency of the chia pudding will vary based on the kind of milk you use, don’t worry if it looks a bit thick or thin when you first try it out. If it’s too thick, add more almond milk.
