Paleo Blueberry Cheesecake
- 2 Sunflower Butter and Jelly Bars
- 1 cup raw cashews (soaked overnight)
- 1/2 cup coconut butter
- 1/2 cup fresh blueberries
- 2 tbsp coconut oil
- 1 tbsp vanilla extract
- 2 tbsp maple syrup (optional)
- For the crust: Press the Bars into a flat dish to make crust
- For the filling: Add all the ingredients and blend until smooth. Spread the filling on top of the crust and freeze!
- Drizzle with seed butters and fresh fruits if you like!
