Sesame Kale Salad with Slivered Almonds

Kale is one of the most nutrient dense foods. It’s a great source of Vitamin A, Vitamin K, Vitamin C, Vitamin B6, Manganese, Calcium, Copper, Thiamin, Riboflavin, Niacin, Iron, and Phosphorus. 

While sesame seeds can prevent diabetes, build strong bones, lower blood pressure, improve digestion, reduce inflammation, and many more. 

And of course how can we forget about chia seeds? These tiny seeds are chock full of nutrients. They have tons of fiber, protein, omega-3s, Manganese, Magnesium, Phosphorus, Zinc, Niacin, Potassium, Thiamine, and Vitamin B2. 

It’s much better to use olive oil and balsamic vinegar to dress your salad than the typical salad dressings. 

Ingredients:

1 pound kale

2 tbsp sesame seeds

2 tbsp chia seeds

¼ cup slivered almonds

extra virgin olive oil

balsamic vinegar

Directions: 

  1. Add kale to a large bowl and sprinkle with sliced almonds, sesame seeds, and chia seeds.
  2. For the dressing, mix one part extra virgin olive oil and one part balsamic vinegar. Toss. It’s that easy!
  3. Optional: Add beans or tofu to complete the meal.
